Our terroir … our knowledge

In the heart of south Burgundy, in the Mâconnais countryside, famous for wines and gastronomy, the Fouilloux family perpetuates their ancestral family know-how in the village of Pierreclos.

For four generations, from fathers to sons, Salaisons Du Mâconnais has evolved by combining: family tradition, respect for the product, flexibility and modernity.

Today, the company site covers more than 16,000 m², with around 100 employees attentive to the quality and safety of the product. Our quality department is able to trace in real time the manufacturing steps and the origin of all our raw materials and ingredients. We are also very committed to farmers through various quality chain contracts.

Know-how and innovation

All kind of saucisson require special attention. The recipes come from a real know-how and are also the result of research and innovation.

We are also attentive to the sourcing of our raw materials and we work with quality meat certified such as: organic, Label Rouge, etc.
